Quantifying accurate calorie estimation using the “Think Aloud” method

A “Think Aloud” exercise was used to assess calorie estimation strategies in nutrition-trained and untrained subjects. Accurate estimators demonstrated the ability to convert portion sizes, knowledge of energy density, and basic math skills. The methodology was informative in assessing the cognitive processes behind nutrition knowledge and identifying focused instruction areas.
